You are what you eat
This is a just a brief overview of how our ingredients are sourced.
The ethics of what we eat and how and where our food is produced is an enormous topic… and an important one. Unfortunately its complexity can leave us with a headache of confusion… or worse, paralyse our ability to make any sensible decisions or changes in our eating habits.
We have not gone into any of the detail of our thoughts and discussions here, but our priorities are pretty clear. They are, in order of importance:
Fair trade
If there is an appropriate fair trade source for any ingredient, we use it. You can find out more about what fair trade means and why we carry the Fairtrade Mark.
Local
If we can find a local producer/supplier we use them. For example, our cream comes from a family–run dairy 2 miles up the road and it’s delivered as part of their daily milk round. However, as we are based in what is primarily meat producing country, we have been wondering about exploring a new range of dripping, tripe and mucky fat truffles.
Organic
If we can find a viable organic option, great… we’ll use it.
